Ever since Scarlett O'Hara uttered the words, "As God is my witness, I will never be hungry again", southern cooks have been making certain that their families, friends and neighbors have plenty of hospitality. Even today when visiting a friend the first question is, "Would you like iced tea, lemonade, or a 'co cola'?" Your drink is always served with a seemingly endless supply of cookies, muffins or cake. Every Methodist or Baptist lady leaves the house with a casserole in her hand. Lunch "on the church grounds" is a feast of the best southern food found anywhere on the earth. My grandmother who never traveled further north than Charlottesville collected recipes from "the grounds". Recipes were often written on the back of envelopes or scraps of paper. She would never suffer to have a recipe from "up there" in her house. She insisted that Yankees Can't Cook, hence the name of my book. Of course, times have changed and so have the attitudes. With the mobility of our society today food preparation has acquired a more American taste and less of a regional taste.

They still get together to watch their beloved New Orleans Saints and have tailgate cook-a-thons that would rival anything, anywhere. Every sporting event, family event, or even a non-event is turned into an excuse for a party. It's the New Orleans way! Robert spent nearly twenty-four years as a firefighter in New Orleans, where he took over duties as the firehouse cook after honing skills he learned from his predecessors. To this day, he sticks with the credo that if you can satisfy a firefighter's palate, you can satisfy anyone's. If You Can't Stand the Heat...a New Orleans Firefighter's Cookbook brings you into the firehouse kitchen. It contains recipes for classic New Orleans fare as well as many original firefighter recipes from this culinary capital. If you've ever wanted to cook a gumbo, make an etouffee, or just master a basic roux, this book is for you. If You Can't Stand the Heat goes a step beyond the typical cookbook by including as many details as possible. Should the pot be covered while cooking? Should the ingredient be hot or cold when mixed in? These step-by-step instructions take all the guessing out of cooking. If you have ever had the desire to try Southern, Louisiana, or in particular, New Orleans-style cooking, Robert Medina breaks it down into easy-to-follow steps that will turn you into a great firehouse cook practically overnight. It is truly Big Easy cooking made easy!

This is a cookbook designed for readers who assume they can't cook because they've never tried. Cooking is a big, scary world filled with weird terms. What exactly is a skillet? What's the difference between a steak and a fillet? If the directions say 350 degrees for 60 minutes, can I do 700 degrees for 30? If you've ever asked one of these questions, this book is for you. Not only does it contain 70 recipes for everything from breakfast to desert, but also several pages of definitions, ingredient substitutions, conversion factors (not as scary as it sounds), and a list of the 15 tools you need to get started making delicious meals. The recipes assume no prior knowledge. Things, like hard-boiling an egg, are explained right in the recipes. Every recipe is easy to follow so its easy to cook. That's why I say: If you can read, you can cook
